14 - Fresh coriander or parsley, chopped (optional)
15 - Coconut yogurt or dairy-free swirl (optional)

# How to Make It:

01 - Heat olive oil in a large saucepan over medium heat. Add onion and garlic, sauté for 2-3 minutes until softened.
02 - Stir in red chilli and all spices. Cook for 1 minute until fragrant.
03 - Add carrots and celeriac, stirring to coat evenly with spices.
04 - Pour in vegetable stock, bring to a boil, then reduce heat and simmer for 25-30 minutes until vegetables are very tender.
05 - Remove from heat. Use an immersion blender to blend until smooth and creamy, or blend in batches using a countertop blender.
06 - Stir in lemon juice. Season with salt and pepper to taste.
07 - Ladle into bowls and garnish with fresh herbs and a swirl of coconut yogurt if desired.

# Additional Tips::

01 -
  • It's naturally creamy without any cream, which feels like a small kitchen miracle.
  • The spice blend warms you from the inside without overwhelming, so you can actually taste the vegetables.
  • One pot, thirty minutes, and you've made something that feels far more intentional than it actually is.
02 -
  • The immersion blender is worth its space in your drawer—it makes this texture impossible to achieve with a fork, and cleanup is genuinely easier.
  • Don't skip the one-minute spice toast; it transforms them from ingredients into a cohesive flavor base.
03 -
  • Blend the soup thoroughly—the celeriac creates natural creaminess that you don't want to waste by leaving chunks.
  • Taste and season at the very end rather than as you go; the flavors concentrate as the soup sits.
